okay all right hi everybody um skip alzheimer here uh of 80 geeks hope we're having a good lunch today it's the 17th um so i'm in a different space today um and a quick explanation for that is that my wife is on some medication that compromises her immune system and so i had to decide whether i was going to quarantine myself from my wife in my house uh or from the world and very hard decision but i love my wife so um basically i have my inju my assistants at the archive who are working diligently and i didn't feel good about letting them go so i'm not at the archive but what i did is i pulled some films while they're not there from the archive and i'm bringing them here now uh the technology i was using let me see if i can do this without doing whatever anyways so i have a portable telecini um that you can see right here i'll turn it you can see it um but it's not working today so i have a plan b fret not so it was working 10 minutes ago and then it just something happened i don't know what it is and it's actually the encoder box that freaked out and not so i don't know anyways we'll have this fixed um soon enough uh i forgot totally forgot that it was um st patrick's day so um i'm gonna see i have a bunch of pre-recorded stuff i'm gonna see if i have anything that's even remotely related i do it's kind of offensive um i don't know maybe we should just watch it um so uh i'm doing some last minute kind of squeaking here uh to see if i can uh get rid of some stuff and make this work let's see yes let's see um anyways let me see thanks for bearing with me um please chime in tell me what you're having for lunch uh where it's gonna be a little rocky today uh i'm actually at my house in my basement using equipment that kind of works but doesn't like to tell us any works but the encoder box was deciding that it's not going to work again this will be fixed tomorrow in the meantime um uh let's see where is that i like i have i said i have like 500 films that i've uh digitized um that i have on a hard drive here so um we're gonna cheat today but very quickly we're gonna get back into the swing of things um with doing digitization live uh probably tomorrow i just have to find the right encoder box and i have to get windows to cooperate here uh let's see where is it um i know this is the most fun you've ever had watching somebody navigate um you're not seeing this but yeah i'm trying to navigate this folder and try to find this uh that's there okay um so i was trying to i would just remember today st patrick's day it's been so crazy um so um i have something that's not really irish but it has leprechauns in it and it's really i don't know i would say it's mildly offensive because they're such grotesque stereotypes but let's go ahead and watch it it's called adventures of chip and dip and it is uh about how healthy potato chips are for you uh this is the food portion of the show because we're having lunch um but this is also got some beautiful assembly line footage which i love so let's go ahead and watch this [Music] foreign [Music] [Applause] [Music] chiplan i i was wondering how did our glorious family of potato chips come to be whack that you don't know the tale of the potato chip [Music] listen me boy the potato chip was born in the abbey run back mountains in 1853 at moon lake house beside lake saratoga was an indian colleen by the name of kate preparing the mulligans too and purely by accident now herself dropped a piece of potato into some hot fat she spooned it out and gave it to george crumb the in cable our cake is a delight fit for the likes of said patrick himself and over a hundred years later human folk decided that they wanted something for parties and clan get-togethers to go with the new delight so the dips were invented and since that time chips and dips have become a party institution and good together they are too now here are a few delightful recipes we know that you will want to try one of the easiest and yet most popular of all the chip and dip recipes is the onion dip to prepare we add one packet of dehydrated onion soup mix to one package of sour cream we mix this until the onion flavor is evenly blended through the cream be sure and refrigerate this or any other dip until you're ready to use it one thing more you better make a double recipe it seems to disappear almost as fast as the potato chips themselves here's a dip with plenty of flavor that goes well with any flavored chip it's called appropriately the teaser mix a half cup of finely chopped bologna with three quarters cup of chopped ripe olives add to this three tablespoons of chopped sour pickles and two tablespoons of chopped pimentos now we add just enough mayonnaise to moisten mix this well and add a few drops of tabasco sauce and grated cheese to taste this teaser is a taste treat that will perk up any party or buffet here's a party dip for those with a taste for something totally different a shrimp dip topped with bacon chips in a blender we have 10 large cooked shrimp we're now going to add a quarter cup of mayonnaise and for tang three shakes of tabasco sauce and one teaspoon of grated onion or onion juice add salt and pepper to your own taste now we'll blend these ingredients together and add just enough cream to achieve the right consistency [Music] a potato chip or the shrimp never had it so good why don't you try one or all of these chip and dip recipes for your next party chip everybody in the whole world loves the potato chips right right yeah well then how in the world can human fork make potato chips out of a wee cattle for everybody in the whole white universe oh where did you get that blimey human folk don't make the bite the kettle anymore but by what themselves call ultra modern production methods you don't say no i do i do come on boy and i'll show you [Music] makushna where are we ah this is where god begins the choicest potatoes in all the world are grown it feels like this there is nothing but potatoes as far as the eye can see i and these potatoes are grown exclusively for potato chips these potatoes have what themselves call special cooking properties which makes them the finest potatoes for crispy potato chips but enough time here let's go see where the real focus focus takes place this is a grand big place chip glory be what's happening over there that's the storage area dip when the potatoes are brought in from the fields they're placed in huge bins like these and stored until they're ready for use each one of these bins can hold over a thousand pounds of potatoes nori b can you beat that over here the potatoes are in their first stage of preparation each one is automatically washed and cleaned this is the first of several washes it will receive the saints preserve us there's a monster loose where where there no that's that's no monster that's the automatic peeler it gently removes only the skins retaining all the good vitamins and minerals that make potato chips a valuable food source [Music] and of course the entire production is supervised by a razor sharp inspection team what do they do well dip they look for and discard any potatoes that don't meet the high standards established by the potato chip institute that's why only the best potatoes go into making potato chips can you beat that and over there is the automatic slicer revolving blades turning at an incredibly fast speed slice each potato paper thin so that they fry up gold and brown look their chip they're being washed again that's to take off the excess starch dip that way they fry crisper taste better and are better for you too look how sparkle and clean everything is so everything must be sanitary when you're dealing with good food there's no such thing as being too careful look over there there are the potato slices going into the stainless steel cookers under carefully controlled conditions each chip is cooked in bats like these until it is at the peak of its flavor and crispness only the highest grade vegetable oils are used to ensure even cooking and complete digestibility [Music] there are those inspectors again yes except these inspectors are checking for any chip that might have been burned in cooking only the best chips are ever packed are you sure that human folk don't use leprechaun magic now only modern american know how and production techniques that's right chip techniques like these automatic packing and sealing machines make packaging easy and fast the potato chips are automatically weighed packed and sealed completely by machine truly a monument to american know-how [Music] and how about the automatic flavor dispensers which create the new flavored chips regular chips are transformed into tempting flavored treats flavors like barbecue green onion and garlic my favorite flavor i know i know but you are not the only one who likes them lad everyone likes potato chips and they do good by any meal or occasion look here here's a meal fit for an irish king broiled steak with barbecue sauce potato salad relish tray and baked beans with strips of bacon and topped with crushed barbecue chips and look plenty of onion flavored and regular chips on hand as well ah but here is one that really fits me fancy a grand buffet southern fried chicken with potato chip coating tuna or cheese casserole with a savory potato chip crust and look rock cornish hens with a garlic chip stuffing uh-ho i love that and of course an ample supply of all the potato chip flavors with creamy dips to catch those appetites before the main course i like those new flavor chips but for myself i still like the plain chip best there's nothing like the company of an old and trusted friend it was delightful chip but i didn't know that human fork were so resourceful hi they can do almost anything a leprechaun can do if they put their minds to it chipped is a shame that potato chips taste so good everything i like seems to do me ill what oh you're dreaming milan that may be true of other fuji but not potato chips you don't say no i let me show you [Music] a potato chip is pure energy [Music] 93.3 percent pure energy that means that potato chips have more food value than over 2500 vegetable and vegetable products we normally eat and chips were found to be better than 1058 foods out of a possible 1100 tested and besides being a quick source of energy potato chips are easily digestible and helping digest other foods [Music] and potato chips are a natural source of salt for our bodies and potato chips are the only cooked vegetable eaten without warming or having to open a can die potato chips seem to be a good food for everyone they are and because potato chips are real food many housewives use them in their everyday cooking look here here is a scrumptious entree to tantalize any man's appetite chip stuffing and spare ribs we sauteed one chopped onion and now we're going to add three cups of cubed bread to this we can add one and a half cup of crushed potato chips and one cup of finely chopped apple the apple will give it a little spice add a half cup of chopped celery [Music] and we're ready to moisten with a cup of milk mix this well and salt and pepper to suit your own taste we have cut the spare ribs into two matching sections spread the stuffing on one section and top with the other bake in 350 degree oven for two hours spare ribs anyone here's a main dish casserole that's quick to fix but ah so good we've already combined sweet potatoes eggs and butter to this we add one third cup of milk a teaspoon of salt and a dash of nutmeg and of course one cup of crushed chips [Music] mix this well and spoon into a greased casserole and bake 25 minutes at 350 degrees when it reaches your table step back and watch your hungry gang dig in having a cookout give charcoal grilled chicken a go after seasoning and cutting a broiler or frying chicken we rub each part with lemon juice and dip them in an egg and milk mixture then roll each piece in crushed potato chips pressing the chips firmly into each piece when the coals are about ready place the chicken on a folding wire and then onto the grill grill slowly for about 25 minutes turning each piece so that it is fully exposed to the embers outdoor appetites won't last long when you serve this treat [Music] i say the piece for myself i'm as bloody part of that we'll be seeing that you see not only are chips good with food but by themselves they are good food what do you think of that lad i was thinking chip why are there so many new and different ways of using potato chips i there are many reasons for that dip but one reason could be that there's a men's national cooking contest held every year and hundreds of thousands of human folk from all over the country enter come on let's look in on the finals this is the potato chip institute international men's national cooking championship every year men from every part of the united states congregate to try their hand at the culinary arts however all the contestants have to use potato chips as one of their basic ingredients sound difficult not at all that's one of the reasons that this contest is held year after year through the contest new and ingenious ways of using chips are found the judges are leading dietitians and newspaper food editors from across the country if there are any outstanding recipes that deserve special recognition these women will find them many unusual recipes have come from these annual contests recipes like this frosted chicken casserole potato chips were used to line the bottom of the casserole and as a crunchy topping the filling for this treat contains cooked chicken onion mushroom soup bean sprouts cashew nuts and halves pears the sugar-coated grapes add just the right amount of color to give this festive dish i appeal many recipes are born from sheer invention like this chip and chicken spaghetti loaf it's moist and tantalizing flavor is due to a delicate blending of cooked spaghetti american cheese chicken of course mushroom soup and one cup of crushed potato chips this loaf deserves the judge's triple a rating some of the past prize-winning recipes have taken on an ethnic flavor take this teriyaki chef's casserole as an example this gourmet delight is as exotic as its name it contains a meatball mixture of ground beef minced onion eggs sugar soya sauce seasonings and crushed potato chips the sauce itself is a delicate balance of soya sauce beef bouillon water chestnuts and topped with hand crushed potato chips it may have an oriental flavor but it's as american as chips themselves [Music] the variety and scope of the entrees has proven that potato chips are as useful in main dish cooking as they are as a snack here's an all beef dinner that illustrates our point adam's apple beef rolls two pounds of prime bottom brown steak provide the base for this country dish add to that onion celery chopped apples a light touch of sherry and coarsely crushed potato chips it's a man-sized meal with a hearty robust flavor these are just some of the dishes that won past recognition at the potato digitizing equipment i have it tell us any but i couldn't get the encoder to work so tomorrow excuse me i guess there's a problem with eating lunch while i'm doing this it's like it all burpee anyways um yeah so tomorrow we'll actually be going back to our format where we are digitizing the films as we watch them and so we get to see stuff that i've never seen before today my in a digitizing card freaked out a little bit and wasn't accepting the signal from the telus any that i have the portable telecentric so i have a lot of uh more than probably 700 films that i've digitized in the past on the hard drive just for such an occasion so uh the first film that we watched was adventures with chip and dip and chip and dip are of course leprechauns which is my tie-in to st patrick's day today uh grotesque stereotypes of the leprechauns um and this film is awesome uh because the potato chip institute international um they still exist and they are actually kind of a lobbying board that makes sure that the government doesn't clamp too much on snack foods specifically potato chips they were also the people that made i believe it was the fda made it to where pringles could not call themselves potato chips they are crisps which they are reconstituted potato flour in the shape of chips and the international of the potato chip institute international was not having that they said absolutely not they didn't feel that that was fair competition so they used their lobbying force to make pringles not a potato chip but crisp so there you go um i love that film because it has a lot of assembly line footage which is a big fan something i enjoy but also um a big fan of these weird recipes um to gratuitously put potato chips into things um so we're doing this uh every day for this week and maybe following weeks as a way to kind of give ourselves a break um from working at home and looking at news and facebook so i'm eating some delicious uh frank's pizza leftover pizza that i got yesterday before i hunkered down i got two large pizzas and ones in the freezer so that i'll have a long rationing supply of pizza and also trying to support my local restaurants who are suffering and my local folks anyways all right so next film um this one is canadian and this is part of a show that i did called when when mascots attack uh and it's basically uh trying to convince kids not to do uh vandalism and do uh delinquent things using uh a scary uh mascot and uh some inane songs so here is let's find something better to do [Music] this is the famous [Music] howard cronkite your roving reporter for c k i d news i go where the news is and the news is wherever i go today the news is here we're going to find out what the ordinary kid in the street knows about vandalism the big question is what is vandalism fundamentism is writing on walls and washrooms riding on walls of buildings vandalism is breaking bottles in the streets vandalism is breaking up playground equipment breaking a window on purpose throwing rocks and stuff and moving buses or cars vandalism is breaking anything that doesn't belong to you even breaking branches off trees or trampling on someone's garden starting fires throwing trash on the street vandalism is against the law vandalism is against the rule it makes so ugly neighborhood and school vandalism is to break or mark what isn't yours at home school or park vandalism is to draw on the wall pictures and words that don't be long at all ugliest sight that you've ever seen costs big money just to make it clean break a toy that don't belong to you a very very bad thing to do it hurts the one to whom the toy belongs you see them cry because you did wrong [Music] make such a mess make people look mad put trashing cans make everyone glad [Music] break a bottle against their wall big mistake for one and all it looks so bad got to be cleaned up could cut the foot off kit and grown up [Music] vandalism is against [Music] what is it [Music] ckid news is asking why is vandalism wrong vandalism is wrong because it makes things look ugly vandalism is wrong because it costs money to fix things up again if you're right on the washroom walls at school the school has to pay money to paint it where does the money to paint washroom walls come from the money comes from our moms and dads because they have to pay taxes and they kind of own the school vandalism is also wrong because when you destroy something that is not yours like a toy nobody can play with it anymore it's a mean thing to do and it makes people feel bad vandalism can be dangerous sometimes too like if you throw rocks and stuff at cars or buses you could hit the driver or you could scare the driver into having an accident it can be dangerous if you break glass on the street you could get cut someone else could get cut or even dogs and cats could cut their feet if vandalism costs so much looks so ugly it makes people feel bad why would anyone want to do it maybe they were just bored and couldn't find anything else to do maybe when you're mad at somebody like a friend or a brother or sister you just want to break something maybe some people just like to show up show up show off what an idea that reminds me of a song he knows [Music] hey look i can be a bit shocked i'm tough and i know that you're not i'll throw a bottle down i'll smash it on the ground big shots that's a dumb thing to do no one likes to show up like you look for another way i think you'd better say [Music] let's find something better to do time something better to do let's limited view and i'm now i'm on a teeter-totter seesaw oh boy um anyways uh yeah so i'm showing uh some films from my collection of 27 000 films um if you like what you saw tell people i'm doing this again tomorrow one o'clock eastern daylight time for an hour or so this is my way to kind of do what i do uh without having to do it in a venue where people could potentially get sick so uh thanks for neighborhood your neighborhood is a little country and if you know how to make a good neighborhood you're going to know how to make a good country [Music] being proud of where you live is being patriotic doing something about it is even more patriotic and i'll push it in there got it right now over a little more over that one wait okay now hold on [Music] [Music] satisfaction with the day's work is a wonderful feeling [Music] taking the time to show love is a very important way to be a good person happy birthday dad your family is a little country and you can learn there i will eventually meet you you can learn everywhere about your country and you can learn how to make your country go that's you patriotism right i'm okay just a little scared i guess there have been a lot of close calls in this corner yes i know we ought to do something your councilman is everett gerard and he will help you if you will help him but first he must know what your problem is remember he's your representative in government dear mr councilman my friend almost got hurt real bad last week at the corner of maple and locust i wish you would put a stop sign there thank you kyle conrad it's your community as much as any other person's it's your responsibility how can you show your responsibility hey sarah hey mary get me the city engineer would you please it's your community as much as any other person john uh gerard here remember we had some discussion about a stop sign at maple and locust i got another letter today this time from a little kid i think you better put it on the agenda for the next meeting all right see you later it's your country isn't it every day you may have some small chance to make it a better country [Music] i don't think we should take pictures here a better place patriotism is being proud of yourself and your work [Music] patriotism is sharing patriotism is cooperation patriotism is being responsible patriotism is love patriotism is looking really looking and really appreciating there are many ways to show your patriotism some small some large but all important all of them ways of showing your love of country showing your patriotism i'm here showing you stuff and forgetting to turn off live mics anyways how about that film uh bob crane um yeah he was very patriotic i mean he was very earnest uh you know besides the fact he was a sex addict he was uh he believed in in what he said there um but had a serious problem with uh sex addiction anyways uh so what time is it all right time for one more film uh and then we'll come back
