But let's get back to the Robinson barn where the milking is about to begin. First, an attendant carefully brushes each cow to remove any dust. Formerly, all cows were milked by hand, but it was slow work and required many helpers at milking time. Now, milking machines are used practically everywhere, and their mechanical perfection draws the milk into completely enclosed pales. In that way, the milk is protected against the possibility of airborne particles getting in. The cows are milked twice a day, early morning and evening. On the average, a cow gives about six quarts at each milking. After milking, the enclosed milk pales are taken to another building protected by an area away or entirely removed from the barn and there emptied into large cans.
