This short food safety film titled “Safe Food” (1965?) follows a Hispanic family residing on a farm as they harvest and prepare their own food. It traces food supplies from farm groves and fields to the market, grocery store and onto family's dinner tables. Through this anecdote, preparations and precautions for crop and food safety handling is translated to viewers. This film is an Audiovisual Facility Production (:17) and a Public Health Service Audiovisual Facility Production (:20). The film was produced for the Division of Community Health Services (:23). It is the third in a Seasonal Farm Workers Health Services series titled "Safe Food" (:31). Each of these films was specifically made to educate English-speaking migrant farm workers, underscoring the importance of clean surroundings, personal cleanliness, and safe food preparation and storage.
The film opens on a woman plucking greens from crops of ripe tomatoes in the field (:39). A large truck carts the fresh red fruit off to market (:46). Consumers pluck fresh fruits and veggies from the produce aisle in the supermarket (:59). Health of the farm hand is discussed. A woman unloads her groceries from a paper bag (1:13) in her home kitchen. Cleanliness of foods purchased for consumption is looked to (1:24). A boy swings a narrow bat in his home camp (1:39). A trash can buzzes with food borne illness and flies (1:51). Close shots watch the flies buzz over rotten food waste (2:04). Flies are known to carry disease (2:13). A cockroach (2:20) and rodent, rat or mouse (2:23) are called out as health food and safety violators. A young boy plucks a red apple from the counter (2:52). The narrator discusses washing fresh produce purchased from grocery stores. The fruit is covered with pesticides. Proper safety methods for food preparation are discussed including proper cook times (3:18) and proper sanitation of kitchen tools (3:32). Safe hold times for opened foods such as tuna must be monitored (3:59). The housewife sets the can next to food goods such as Masa Harina and elbow macaroni (4:07). Flies buzz over the opened and now spoiled can of tuna (4:11). A young boy suffers from food borne illness in bed (4:21). The father and mother of a family of four (4:51) discuss various factors affecting their health including pesticides. Thick slices of pork and ham are lifted from the skillet (5:28). The family fills the dinner table after washing hands (5:37). Cutlery is sanitized. The boy swats a fly on the wall (6:08). Anita wraps leftovers with care (6:31). A broom removes debris from under the table (7:13) deterring rats and insects from entering the premise. Dishes are washed and cleaned following the meal (7:27). Pans are scrubbed sudsy clean with hot water. Anita covers the dry dishes with a floral covering (7:47). The boy dumps food waste into a silver can set outside (7:57). Proper diet is discussed (8:31). A doctor discusses health of agricultural workers (8:40). Foods from the store and field are washed prior to eating (9:53). The film concludes with a reminder of each of the lessons learned (10:09) and the US Public Health Service seal (11:08).

[Music] e these are the fields you work in and these are the good foods you harvest so they get to the markets and canies on time to help keep people everywhere healthy and strong but what about your health to do your best work you too must be healthy and strong not only must you have good food but it must be clean and safe to eat yes food can help to keep you well and strong but if it is not clean and safe to eat it can also make you sick in the camps where you live there are many ways that good food can become unclean and unclean food is dangerous it can make you very sick here is one way good food can become unsafe for eating in keeping your food clean the fly is one of your worst enemies he lives and breeds in all kinds of garbage and filled he walks across places like this and then walks across your food carrying to it all the filth his feet and body have touched and here's another one of your enemies the roach and this these rats live in dirty Dark Places and carry dirt with them wherever they go they not only eat any food they can get to but they leave on it filth that can make you very sick but not all sickness that comes from eating unclean food is caused by flies roaches and rats this apple will probably taste fine but it might be covered with a poison sprayed on to kill bugs which may also be harmful to people vegetable too which can be eaten raw are not clean enough to eat as they come from the store or field they can make you sick and there are some meats that need to be cooked thoroughly before they are eaten pork for example even food that is cooked enough can make you sick if it's cooked in unclean pots and pans eating from unwashed plates with unclean spoons and forks can give you diarrhea and sickness far worse here is another way good food can make you sick this tuna fish is good now because the can was just open but if it is kept too long outside of a refrigerator or ice box it will spoil and whoever eats it could get very sick and maybe die yes these are some of the ways good food can become unclean and unsafe to eat and make you sick but what are some of the things you can do while living in camps to keep this from happening how can you be sure that your food will not only look good and taste good but will be safe to eat let's see some of the things one family does to protect their food and their health this is Roberto Madrigal he his wife Anita and their four children have lived in many different kinds of camps now for several seasons they've learned how to handle some of the problems we have seen Anita has seen crops sprayed or dusted with poisons to protect them from insects and she knows that an apple like this should be washed carefully before anyone eats it in this house Meats like pork and ham are cooked thoroughly before they are eaten and when the meal is ready it is served on clean plates eaten with clean spoons and forks and with Clean Hands the Madrigal family enjoy their food not only because Anita is a good cook but because they know she gives them good food and it is not likely to make them sick most of the Flies are kept out of this room and those that do manage to get in had better watch out we have seen that some of the work which makes it possible to serve good clean food that is safe to eat comes before the meal but a lot of it comes after Anita is very careful with left overs she knows that this food will be good tomorrow if it is stored properly today this means putting it away in a covered container she knows too that some foods like fresh milk Meat and Fish must be kept cold to stay good this old refrigerator has seen plenty of use in camps where there is no refrigerator to use or share she is careful about the food she buys powdered milk will keep outside the refrigerator and can be mixed fresh for each meal as for the foods that spoil quickly she buys only what can be used up right away cleaning up after meals is important crumbs and food scraps will attract insects and rats a clean place to eat will stay a healthy place to eat most people don't like this job but it's an important one Anita knows that you have to use plenty PL of hot water and soap to do a good job and when dishes and pans have been washed and rinsed with clean water they should be put away and covered from dust and flies with everything cleaned and stored safely away for the next meal Anita feels sure that the good food she prepares will help to keep her family healthy and well this family appreciates a clean house and surroundings and knows that putting garbage and TR where it belongs is an important job after every meal well you've seen some of the things this family does to stay healthy and well while living in camps let's talk about these things for a while I am Dr Castillo one of the most important things in keeping well is eating the right food each year during the season many of the people who harvest the crabs come to me when they are sick many times their sickness it is due to something they ate from eating food that has been exposed to flies and rats or leftovers that had begun to spoil sometime it is due from eating food that has been cooked in dur utensils or eating from dishes that were not properly washed but keeping your food safe for eating isn't too hard to do you have just seen some of the things one family did while living in the camp to be sure their food was clean and safe for eat but do you know why they did these things why is clean food so important to your health what problems do you run into encamps and keeping your food clean why is it often unsafe to eat raw foods as they come from the store or field what should be done to them in order to make them safe to eat why should be so careful about how you put away leftover Foods why must some foods be kept in a refrigerator or ice bags what should you do about these Foods if you don't have a refrigerator or ice bag why should where you cook as well as what you cook in and it will be kept clean knowing the answers to these questions is very important the people showing you this movie have come prepared to talk to you about these problems or
